Stock control
Stock reports
Food cost and GP, wastage, price rises, stock value and count differences, over one period you choose.
Stock reports
Reports is under Money in the Stock menu. Every tab uses the same period, so you choose it once.
Choosing the period
The period picker at the top offers Last 7 days, Last 30 days, This month, Last month and This quarter, or Pick dates… for any two dates. The period stays the same as you move between tabs.
The tabs
- Overview: the headline figures for the period, including revenue, the cost of what was sold and food cost.
- Food cost and GP: food cost as a share of sales, and GP by dish: each recipe's cost per serve, its price and its GP. Colours come from your GP target (set under Settings, Counting and costing): a 70% GP target means a 30% food cost target, so food cost at or under 30% is green, up to five points over is amber and beyond that is red.
- Stock value: what the stock you hold is worth.
- Wastage: everything logged as wastage, totalled by reason (spoiled, dropped, prep or trim, staff meal and so on) and by ingredient, priced at what you paid. Stock put back from cancelled orders shows as Cancelled orders. When some entries have no price, the report says the real total is at least the figure shown.
- Price rises: supplier products whose price went up in the period, from your invoices, compared with the price before the period started. Each one lists the dishes that use it and which of them are now under your GP target, with a link to the recipe. Changes under 3% are left out.
- Supplier spend: what you spent with each supplier.
- Stock movements: every change to stock in the period.
- Count differences: the gap between what your counts found and what Stock expected.
Low stock is no longer a report: To order under Order lists everything below par, by supplier.
Asking about a figure
Ask Ma can answer the same questions in words: "what did we waste last month?", "which prices went up since October?" or "why is milk down?". It works from the same figures and links to the report or screen it used.
